An Easy Summer Recipe with Suddenly Salad

Whenever we get together with family during the summer, it usually involves spending time around the pool or in the backyard with burgers on the grill, juicy watermelon, and a variety of side dishes. The side dishes always take a meal to the next level, and I have always found that you can’t go wrong with a salad. Especially pasta salad, which my kids gobble down SO fast whenever we make it. In fact, it’s hard to get a full salad bowl out the door with my houseful of taste testers.

Kid-friendly summer salad

We needed some ideas for our 4th of July picnic. So, my junior chef and I headed to Publix with this coupon to check out the tempting flavors of Suddenly Salad. My boys prefer classic pasta dishes, and we chose the Classic Suddenly Salad for our recipe since it’s so easy to customize.

A cold pasta salad is so appealing on a hot summer day, especially in our humid southern climate. And, it is easy to make and jazz up with ingredients of your choice. To stick to our grocery budget, we decided to use some items from our pantry to create a kid-friendly summer salad. We used the coupon from the BettyCrocker website to get three boxes of Suddenly Salad so we could combine them to make a large shareable batch.

How-To

Our junior chef followed the instructions on the box to cook the pasta and mix up the dressing. He used olive oil instead of vegetable oil with the mix. (Tip: When combining 2 boxes of pasta salad, we only use one packet of dressing. For 3 boxes, we use 2 packets.)

To jazz up the mix a little more, our junior chef added 1/2 package of pepperoni, chopped. After refrigerating to get the pasta salad nice and chilled, he topped it with a sprinkling of Italian bread crumbs and grated Parmesan cheese.

    These are so good! I used to get this kind of pasta to make pasta salad, but can’t anymore being gluten free.

      They have grain salads now, too, in addition to the pasta ones. Can you eat those? The Southwest one is delicious! It has these ingredients: Brown Rice, Quinoa, with Black Beans, Corn, Red Peppers and a Chipotle Vinaigrette. I’m still learning about gluten ingredients, so I’m not sure if these are on the allowed list or not?
