My Kid’s Favorite Food

Kids’ tastes in food are one of life’s great mysteries. Take vegetables, for example. Yesterday your son would eat green beans, but today, thanks to his new aversion to green foods, he won’t go near them. If this sounds like dinnertime at your house, you’re in luck.

Picky eaters have finally met their match! With the help of The Wisest Kid in the Whole World™, Campbell’s soup is offering delicious recipes your kids won’t be able to refuse.

The recipes are easy to adapt, too. My son’s favorite food is chicken pie. He asks for it at least once a week, but because he’s picky, he doesn’t want the veggies inside the pie. That’s easy enough! He still eats the veggies on the side!

Here’s my take on the Campbell’s recipe. The best part is that it’s easy enough for my son to make it himself!

Easy Chicken Pie

In order to make enough for my family of 5, which includes three hungry boys (who eat us out of the house), this recipe makes 2 pies:

  • 2 cans cream of chicken soup
  • shredded cooked chicken
  • lowfat milk
  • butter
  • 4 refrigerated pie crusts
  • salt and pepper

I roast two boneless, skinless chicken breasts sprinkled with a little salt and pepper in a 350 degree oven for about 30 minutes, but sometimes I use store-bought cooked rotisserie chicken.

While the chicken is cooking, spray two casserole dishes with a small amount of cooking spray, and spread one pie crust into each dish.

Once the chicken is done, shred it apart with a fork. One tip: if you shred it into smaller pieces, it seems to fill up the pie better.

Next, divide the cooked chicken into the prepared dishes, covering the bottom of the pie crust. Then, mix one can of cream of chicken soup with one can of lowfat milk for each pie, and pour over the chicken. Sprinkle the entire thing with a generous amount of pepper.

Place the remaining pie crusts over the top, pressing the edges together. Pierce top with knife or fork, and (my grandmama’s trick) Place a few small pats of butter across the top to make the crust get extra golden brown.

Bake at 350 degrees for 30 minutes or until crust looks done.

    Those recipes look yummy! Sometimes I really miss the convenience of being able to use canned soup in recipes (my boys have food allergies).

    Thanks for stopping by! The best thing about this recipe is how easy it is to change it up and adapt it to special dietary needs. Old-time basic recipes make it easy to incorporate your preferences. My grandmama always made this from scratch, but I like the convenience of pre-made pie crust and a can of soup. My kids are too picky, but this is especially delicious with mixed veggies or broccoli and cheese added.
