Kids’ tastes in food are one of life’s great mysteries. Take vegetables, for example. Yesterday your son would eat green beans, but today, thanks to his new aversion to green foods, he won’t go near them. If this sounds like dinnertime at your house, you’re in luck.

The recipes are easy to adapt, too. My son’s favorite food is chicken pie. He asks for it at least once a week, but because he’s picky, he doesn’t want the veggies inside the pie. That’s easy enough! He still eats the veggies on the side!
Here’s my take on the Campbell’s recipe. The best part is that it’s easy enough for my son to make it himself!
Easy Chicken Pie
In order to make enough for my family of 5, which includes three hungry boys (who eat us out of the house), this recipe makes 2 pies:
- 2 cans cream of chicken soup
- shredded cooked chicken
- lowfat milk
- butter
- 4 refrigerated pie crusts
- salt and pepper
I roast two boneless, skinless chicken breasts sprinkled with a little salt and pepper in a 350 degree oven for about 30 minutes, but sometimes I use store-bought cooked rotisserie chicken.
While the chicken is cooking, spray two casserole dishes with a small amount of cooking spray, and spread one pie crust into each dish.
Once the chicken is done, shred it apart with a fork. One tip: if you shred it into smaller pieces, it seems to fill up the pie better.
Next, divide the cooked chicken into the prepared dishes, covering the bottom of the pie crust. Then, mix one can of cream of chicken soup with one can of lowfat milk for each pie, and pour over the chicken. Sprinkle the entire thing with a generous amount of pepper.
Place the remaining pie crusts over the top, pressing the edges together. Pierce top with knife or fork, and (my grandmama’s trick) Place a few small pats of butter across the top to make the crust get extra golden brown.
Bake at 350 degrees for 30 minutes or until crust looks done.
