This is one of my family’s favorite meals, and in the summer, I can get most of the ingredients from my backyard garden.
Garden to Table Fajitas
1 onion, sliced
1 tomato, sliced
1 bell pepper (any color), sliced
add thinly sliced chicken or steak, if desired, or go vegetarian-style
Dump everything in skillet over medium heat. Sprinkle generously with salt-free fajita seasoning, drizzle on a little olive oil, and cook on medium heat until the onions start to stick to the pan. You want to let the onions caramelize a bit for best flavor. Serve with warm flour or corn tortillas, grated cheese, and salsa. I have only used Bolner’s Fiesta brand salt-free fajita seasoning since I learned how to make fajitas when we lived in San Antonio. But, I can’t get it where I live now, so I have to order it online when I run low. It’s the best!
This is super-easy and quick to prepare, and if you’re brave, you can toss in some sliced jalapenos (doesn’t everyone have a gazillion peppers and tomatoes right now?) Here’s a time-saver: pre-slice everything early in the day and store the meat and veggies in two separate storage bags in the fridge. Just toss in the pan when you’re ready to cook.Share this:
